Enjoy the sharp flavor from the sausage with the bitterness from the peppers combined with the slight sweetness from the sweet potatoes. Great combination!
Sausage and Peppers
1c beef broth
1 lrg tomato, cut in wedges
2 cloves garlic, whole is fine
1/2 lrg red onion, cut in wedges
1t italian seasoning
1/2t pepper
2 colored peppers, sliced
1 beef sausage link, sliced
1lb green beans
1T avocado oil
3 sweet potato, cut into french fries
1t paprika
2t salt, divided
Preheat oven to 400
Make slurry, in blender combine 1c beef broth, 1 large tomato, 2 cloves garlic, 1/2 red onion, 1t italian seasoning, 1t salt, and 1/2t pepper. Blend until smooth. Set aside.
In large pot (that has a lid), boil 8c water, be sure to salt the water. Add 1lb. green beans, blanching for 3 minutes. Remove with slotted spoon to an ice bath (bowl of cold water with ice cubes to stop the cooking process). Leave them in the bath and set aside.
Using same boiling water, add 3 sweet potatoes cut into fry size pieces of your choice, boil for 5-7 minutes then drain (while they are boiling, this is when I cut up sausage and peppers).
Toss drained potatoes with 1T avocado oil, 1t paprika and 1t salt. Place in single layer on cookie sheet with sides.
Bake in 400 degree oven for 30-35 minutes, stirring half way through.
Using same pot, fry beef sausage links for 5-8 minutes, stirring half way to brown other side. I do not add oil to this, there is usually enough fat in the beef it is not needed.
Add 2 colored peppers and slurry, mixing well. Bring to boil, cover and simmer for 30-35 minutes, stir occasionally.
When I remove the fries from the oven, this is when I add green beans to beef mixture, mix them in well and simmer 3-5 minutes more.
Serve sausage and peppers over sweet potato fries.
You can top with green onions if you like.
