I hear varying my food intake would help my body get what it needs so I can do what I want physically. I was making a cauliflower mash to go alongside my Pork Chops with Mustard Sauce I thought why not throw in some parsnips (plus they were on sale). I am glad I did. The parsnips added the extra layer to the mash.
Parsnip Cauliflower Mash
1 head cauliflower
3 parsnip
1-2t salt
1/4c broth
1T butter
salt and pepper to taste
Break cauliflower into florets and peel then chop the parsnips into about 1″ pieces.
Bring 2″ of water to boil, be sure to salt your water.
Add vegetables and cover, lowering heat so the water is simmering. Simmer for 5-7 minutes, stirring once.
In a blender, place the butter and broth, then add a couple ladles of vegetables; blend until smooth.
Keep adding vegetables and blending, 2 ladles at a time, until all are incorporated.
You can add more broth (or water from the pan) if needed.
Season to taste.
