Made winter squash soup today. I used the peelings from potatoes and carrotsto make small crunchy toppings for my soup.

Cracklin Peelings

Peelings or the last bits of your veg

Potato, Carrot, zucchini, green onions….

Oil

Salt to taste

Cut peelings into tiny bits and fry in hot oil.

Drain, salt to taste.

Use as soup or salad topping.

Note wash the vegetables before peeling.
