Quick, easy, full of flavor. Asparagus pairs so well with lemon and garlic.

Roasted Garlic Asparagus

1T           grapeseed oil

2 clove  garlic

1 bunch asparagus (1 pound)

1/2t        salt

1/2t        pepper

1T           lemon juice

Preheat oven to 400. Line a sheet pan with aluminum foil.

Wash and trim asparagus. I do this by hand, holding each stalk in my hands, bending gently in middle until a portion snaps off. Keep the top portion for roasting, I save the bottom portion to make vegetable broth.

Place asparagus on the cookie sheet, drizzle with 1T grapeseed oil (or avocado oil), 1/2t salt, 1/2t pepper, 2 clove garlic, minced. Toss together.

Roast at 400 for 15-18 minutes, stir once.

Drizzle with 1T lemon juice, serve immediately.
