Simply Mushroom Side
1 tin brown crimini mushrooms, cleaned and sliced
2T avocado oil
1/2t salt
1/4c dry white wine
1T fresh parsley, chopped
Using a 10” frying pan over medium high heat, when pan is hot, add 1T oil.
When oil is heated up add half of mushrooms, in a single layer. Sautéing, undisturbed for 4-6 minutes. Flip all mushrooms over, add ½ salt and sauté for 2-3 minutes more. Remove to a paper towel.
Add remaining oil to pan and sauté next batch of mushrooms. Please note you may need to lower the heat on the pan as once heated up it is easier to maintain the heat level.
When mushrooms are done, return all mushrooms to pan. Turn off heat, add white wine mixing well, just to heat through, then remove from heat and toss with parsley.
