Hot spice mix, that is literally what garam masala means. And this spice mix delivers. Lots of flavor and chock full of vegetables. If you don’t like spicy food, this is probably not for you.
Garam Masala Spice
1/2t turmeric
1/2t coriander
1/2t red pepper flakes
1/2t cinnamon
1/2T cumin
3/4t cardamom
3/4t black pepper
1/4t clove
Add all to mortar and crush with pestle. This yields 1.5T of garam masala
Garam Masala Stew
1T coconut oil
1/2 white onion, diced
1″ ginger, minced
1.5T garam masala
2c water
4c vegetable broth
1can tomato, diced
1c lentils
1/2 white cabbage, shredded
2 sweet potato, diced
juice 1 lemon
Heat up stock pot on medium high heat. When the pan is hot add coconut oil then onion and ginger. Stirring frequently, saute 3-5 minutes.
Lower heat, add garam masala and fry for 1-2 minutes more, stirring constantly.
Add broth, tomato (with juice), water, cabbage, sweet potatoes, and lentils.
Bring to a boil, then cover and lower heat to simmer for 20-22 minutes. Stir occasionally.
Add lemon juice.
Serve as is or you can add greek yogurt, sour cream, non-dairy sour cream, cilantro, and/or parsley.
