I can get kale almost year round where I’m at. I’m sure you’ve heard all the people saying how good it is for you, I just wish it tasted better. Here’s a stab at masking the bitterness so I can get all the goodness out. 

Red Pepper Kale

2T olive oil

1 red pepper, diced

3 cloves garlic, minced

1 bunch kale, stem removed, bite size pieces

1t salt

1T water

2T balsamic vinegar

In large saucepan heat olive oil on medium high heat. Add pepper and garlic, sauté for 3-5 minutes, stirring often.

Reduce heat to medium and add kale, salt and water. With a lid on the pan, steam for 8-10 minutes, stirring occasionally. Add more water, 1T at a time, if you need more.

Remove the lid and add vinegar. Toss to coat then cook for an additional 2 minutes.
