I enjoy this quinoa cooked in a rich vegetable broth and finished off with a touch of butter, lemon juice, and parsley. A great compliment to any creamy dish. I enjoyed this alongside Zucchini Pie.
Tart Quinoa
1c quinoa
1 1/2c vegetable broth
1T lemon juice
1T butter
1/4c fresh parsley
1/2t salt
Bring to boil 1 1/2c vegetable broth, add 1t salt, then lower heat and add 1c quinoa rinsed. Simmer tightly covered for 15-18 minutes.
Remove from heat, add 1T butter, stirring until melted.
Add 1T lemon juice and 1/4c parsley, roughly chopped. Mix well and serve.
