Travis’ Chicken Noodle Soup

Signed up to bring meals to a friend who is going through chemo treatment, Travis. Please shoot up a prayer for him and all those going through chemotherapy. Made him this soup with some biscuits. Travis likes chicken but I am allergic to chicken so a big thank you to Kim for taste testing this soup for me.

Ingredients

2 Chicken breasts

2 Celery sticks, cut in half

2 Carrots, cut in half

½ White onion, in two wedges

2 Garlic cloves, peel removed

1 Bay leaf

1t Thyme

1t Salt

1/2t Pepper

8c Water

2 Celery sticks, diced

2 Carrots, diced

½ White onion, diced

1c Egg noodles

To make broth, add chicken breasts (whole), celery, carrots, onion, garlic, thyme, salt, and pepper to 8 cups of water. Bring to a boil then lower heat to simmer for 30 minutes.

Remove the chicken and set aside to cool. Continue to simmer for another 20 minutes, then remove and discard the vegetables.

 Add in the new vegetables (celery, carrot, and onion) and bring back to a boil. Lower the temperature and simmer the soup for another 15 minutes.

Cut up the chicken into bite size pieces and add to the soup along with the noodles, and simmer for 6 to 8 minutes (noodle cooking time).
