Julie is a Realtor who lives in Nashville, TN. She was making her television debut on House Hunters so we decided to make a night of it. A few friends got together to watch her episode and enjoy a meal. And yes, she did find a house for the buyers, in case you were wondering. Here is the episode info:

Found this surprisingly sweet dish refreshing and we enjoyed it with Julie’s Green Chile Corn Cake.

Julie’s Sweet Basil Shrimp

2T butter

2T coconut oil

1t apple cider vinegar

½ yellow pepper, diced small

1t basil

1lb medium shrimp, peeled and deveined

1c apple juice, divided

1tin mushrooms, cut in bite size pieces

1 bunch asparagus trimmed and cut in bite size pieces

½ red onion, diced

2 cloves garlic, diced

1 tomato, diced

1t salt

1/2t pepper

 

In skillet on med high heat melt butter, oil and vinegar. Add basil and yellow pepper, frying for 3 minutes.

Lower the heat to medium low and add shrimp, stirring to coat well. Fry shrimp for 3 to 4 minutes. Remove the shrimp and add 1/2c apple juice. Simmer the sauce until it is reduced by half, stirring occasionally.

Add the mushrooms and 1/2t salt, stir to coat well. Cover the pan and simmer for 5 minutes, stirring once.

Add the asparagus, onion, and garlic, mix it up well then cover the pan and simmer for 5 more minutes.

Add the tomato, remaining salt, pepper, and apple juice. Cover the pan and simmer for 5 more minutes.

Turn off the heat then add the shrimp back in. Mixing to ensure all the shrimp are coated well.

As pictured: ladled the sweet basil mixture over 4 or 5 of Julie’s Green Chile Corn Cake, then add a little extra sauce.
