I am constantly looking for a weeknight meal that is fast, easy, and not horrible for me. Found a pound of hamburger and some broccoli in the freezer and when I saw the sesame oil I figured Asian was the way to go. This speedy broccoli beef gets you eating fast.

Speedy Broccoli Beef

1 lb.        ground hamburger, thawed

1 large   head broccoli (or frozen bag, thawed)

2T           cornstarch

1/4c       beef broth

1t            dark sesame oil

1 clove  garlic, minced

1/2″       ginger, minced

2T           coconut aminos

1T           honey

1/2t        red pepper flakes

1T           avocado oil

                salt and pepper

Salt and pepper both sides of one pound hamburger and set aside.

Bring to boil 6 quarts of water, add salt until water tastes salty.

In small bowl mix 2T cornstarch, 1t dark sesame oil, and 1/4c broth, set aside.

In second small bowl mix 2T coconut aminos, 1T honey, and 1/2t red pepper flakes, set aside.

Trim 1 large head broccoli (or 1 use bag of frozen broccoli) into 1″ pieces and boil for 2 minutes in salty water.

Drain well.

Pour broth over broccoli and set aside.

Brown hamburger over medium high heat, draining excess fat.

Set hamburger aside, add 1T avocado oil to hot pan.

When oil is very hot add 1 clove garlic minced and ½” ginger minced, stirring for 30 seconds.

Add honey mixture to hot pan and stir for another 30 seconds.

Add broccoli and stir for 30 seconds.

Add hamburger and stir for 30 second.

Eat.

As pictured, served over cauliflower rice (or you could use regular rice if you prefer).
